This estate in the tiny appellation of L'Etoile was first planted with grapes a hundred years ago and is farmed organically. Their classic Cremant du Jura is very Champagne-like, in the best sense -- flavorful in a nicely yeasty way, bright, dry and crisp, with a lovely mineral underpinning.
